I would like to bring to your attention another disorder which is greatly affected by our food intake (or could be avoided by avoiding certain foods). Celiac’s disease is a disorder of immunological origin, an autoimmune disease ( meaning our defense mechanism composed of white blood cells attacking our healthy cells and tissues).
It’s a disease of the small intestine, caused by a reaction of a protein know as gluten, and found in wheat products. When exposed to gluten, an enzyme in the small intestine transforms the protein, and as a result an immune reaction is triggered in the intestinal wall. An inflammatory reaction accompanied with pain, diarrhea, and malabsorption problems is then created.
Any thoughts about this disorder ? it affects about 1 out of 133 healthy people in the US, therefore prevalent in our society. 1 out of 133 is statistically very significant, don’t you think?
